Tradtional method sparkling wine made from 100% Pinot Noir. The grapes are picked at the precise moment of balance between acid and sugar to allow for the traditional method. The fruit is picked very early in the morning before the heat of the August sun and rushed to the winery to be cooled and pressed as quickly as possible. The result is a white juice from “black” (red) grapes; e.g. Blanc de Noirs. The press is carefully monitored to separate only the finest juice for sparkling, which is fermented in barrel and aged in barrel for 6-8 months before bottling. At bottling, sugar and fresh yeast are added and the bottles quickly sealed so the wine ferments a second time in bottle. During the next 18 months the wine develops its carbonation and the yeast contributes to the mouthfeel and flavor of the wine. The yeast is then expelled from the bottle in a process called riddling and disgorging and finally a proprietary liqueur is added to balance the finished wine.

On the nose the wine exhibits passionfruit, raspberry and almonds backed by notes of toasty gingerbread. The wine is lively with acidity, bursting with candied lemon and fresh apple, but balanced on the finish with sweet peach flavors and a richness gained from 18 months en tirage.
