Vinification
All fruit was pressed directly to barrel between September and November with later season varieties seeing extended sweating upwards of a month. Upon completing a native primary fermentation, select barrels saw a reinvigoration of their lees by weekly Bâtonnage. Barrels were left undisturbed during the spring and summer until racked off gross and fine lees in August of 2020. Bottled sparkling via traditional method and rested for an additional nine months undisgorged before its release. No additions of SO2 were made at any stage of this wine.
Notes
Our goal with this year’s house cuvée was to showcase the intense ripeness found in 2019. We broadened our selection of apple varieties with the intention bringing more brightness with Winesap & Albemarle Pippins, shifting some of the aromatic profile from citrusy to tropical with the addition of Black Twig and VHC, and offering a little more girth than the previous vintage. Harrison and Ashmead’s Kernel continued to provide the backbone to this cider but new additions of Golden Russet contributed fullness, and Arkansas Black aided in structure. As an introduction to our style of cider, this bottling is intended to be approachable and uplifting.
