In many agricultural pursuits, a romantic notion eventually meets with a practical reality. European farmhouse and monastic brewing traditions offer a compass. On our farm, we: Repurpose our century old barn to brew; Draw water from a source deep below our fields; Grow grain on the land next to our brewhouse; Capture yeast that’s carried into our fields. As we seek what they sought, the results reflect our ingredients and methods, which can only be something else altogether.
